Spicy Thai Beef Salad with Kombucha Dressing

Since everyone seems to be full of cold I thought I would share this summery recipe which is healthy and immune boosting.

Hot chillis are full of beta carotene and antioxidants that support your immune system and will aid in fighting off colds and the flu.

Increased body temperature from the ingestion of hot chillis triggers the immune system into action in fighting the cold/flu viruses.

This spicy 🌶 Thai inspired steak salad is a dish I have tried to recreate from the Thai restaurant at Constance Euphalia Seychelles! It was so nice to have by the pool on a hot day.
It is fairly simple to make and not all ingredients are essential if you want to mix it up with other ingredients like peppers, mushrooms etc.

Serves 1 large salad or 2 starters

Ingredients
1 sirloin steak approx 250g
1 red gem lettuce
1 small cucumber chopped
125g Cherry tomatoes halved
Sweet Thai basil leaves picked from 2/3stems
1 quarter avocado 🥑
1/3 red onion sliced
Lime wedge to serve

Dressing
100ml lime & mint kombucha
1 fresh Thai chilli finely sliced. Remove seeds if you prefer not to spicy or use 2 for extra spice.
Clove of minced garlic
Large teaspoon of ginger
Teaspoon of honey or agave syrup

Mix your dressing and adjust to taste.
Add 1/3 of the dressing to the steak and leave in the the fridge to marinade for at least 2 hours.

Wash, dry and assemble your salad by evenly scattering across your plate.
Cook the steak to your liking. I cooked approximately 3.5 minutes each side for medium rare.
Leave to rest for 5 minutes
Slice and assemble with a slice of fresh lime.
Drizzle with kombucha dressing and YUM!
